Boudinettes of Lobsters, Prawns, or Shrimps

Ingredients

Directions

  1. Prepare the fish by shelling the prawns or lobsters and touching them as little as possible.

  2. In an enamelled saucepan, combine the fish with 3 ounces of butter and your choice of spices.

  3. Place the saucepan by a gentle fire and heat the fish gradually, shaking occasionally to mix the seasoning.

  4. Do not allow the mixture to boil; heat until the butter is nearly simmering, then remove from heat.

  5. Let the fish sit in the saucepan for a few minutes, then transfer them evenly into small round cups.

  6. Pour clear butter over the fish and serve dry or with a rich white sauce colored with lobster-coral around them.
