What each ingredient does

Beet roots
Provide the main body, earthy sweetness and deep red colour of the dish.
Melted butter
Adds richness and fat that carries flavour and softens the earthy taste of the beets.

The step that matters

Leave the beets unscraped and uncut before boiling. The intact skin and root tip seal in colour, sugars and juice. Cutting or scraping first lets the pigment and sweetness leach into the water, leaving the beets pale and bland.
