Ingredients

Directions

Infuse and dissolve

  1. Infuse the lemon rind and bitter almonds in the milk for 1 hour.

  2. Gently boil the mixture with sugar and isinglass, stirring often until dissolved.

Finish and set

  1. Remove any scum and stir in the cream.

  2. Strain the mixture into a bowl and stir gently until nearly cold to prevent the cream from settling.

  3. Gradually mix in the brandy before molding.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm, tender custard as it cools.
Rich cream
Adds fat and richness, giving a smooth, creamy texture.
Sugar
Sweetens the custard and balances the flavour of the almonds and lemon.
Milk
Forms the liquid base that the other ingredients set into a custard.
Brandy
Adds aroma and flavour to the finished custard.

The step that matters

Stir gently while the mixture cools. Stirring gently until nearly cold keeps the cream evenly suspended, so it does not separate and settle to the bottom before the custard sets.

  4. Lemonthe original

Fit is the average pairing score against milk, almond, sugar, cream, brandy. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
