What each ingredient does

Egg whites
Clarify the broth by collecting cloudy particles, leaving it clear.
Sherry
Adds acidity and aroma to the broth.
Celery
Contributes a fresh, savory flavor and crisp-tender texture to the soup.
Leeks
Add mild onion-like sweetness and aroma to the broth.

The step that matters

Clarifying the broth with egg whites. Egg whites must be whisked into cold liquid and then heated gently so proteins coagulate and trap cloudy particles. Adding them to hot broth or boiling too vigorously can cloud the soup instead of clearing it.

Swap the celery

How well each one fits the dish's main ingredients (egg, sherry, leek):

  1. Thymefits better
  2. Nutmegfits better
  3. Capersfits better
