Iced Souffle

Ingredients

Directions

  1. Prepare Genoese cake and cut it into three or four graduated circular pieces: one 8 inches, one 6 inches, one 4 inches, and one 1.5 inches in diameter.

  2. Stack the cake pieces with fruit jam to form a pyramid.

  3. Arrange rows of prepared fruit (peaches, apricots, pears, or apples) on the pyramid.

  4. At the top, place a vase or cup made from apple or pear filled with a mix of fruits.

  5. Mask the fruit with diluted apricot jam and maraschino.

  6. Use a paper cornet filled with whipped cream to decorate the base in a wave pattern, and add plumed pieces of green angelica.
