What each ingredient does

Oysters
Are the main ingredient, gently cooked so they stay tender and plump.
Sherry
Adds acidity and aromatic depth to the warm oyster liquor.
Oyster liquor
Carries the seasoning and flavour of the oysters into the stewing liquid.

The step that matters

Keep the liquor just below boiling once the oysters go in. Oysters toughen and shrink when held at a hard boil, so a gentle heat keeps them tender and juicy while they cook through.

Swap the mace

How well each one fits the dish's main ingredients (oyster, sherry, lemon, vinegar, parsley):

  1. Thymefits better
  2. Tarragonfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against oyster, sherry, lemon, vinegar, parsley. Candidates are from the same food group and used in at least 100 recipes.
