Ox Tongue a LA Calcutta

Ingredients

Directions

Cook the tongue

  1. Boil or braise the ox tongue until tender.

  2. Skewer the tongue to a board to maintain its shape and trim any excess fat.

Decorate

  1. Glaze the tongue thinly and garnish the tip with sieved egg yolk and green butter or ham butter.

  2. Ornament the rest of the tongue with the same garnish in rows and attach a frill.

  3. Place dressed green salad around the sides and fill the hollow with quartered curried eggs.

  4. Surround the dish with chopped aspic and lay a border of curried quenelles with parsley or chervil in between.

Serve

  1. Before serving, place blocks of Iced Sauce à la Calcutta on a dish or in tiny molds, garnishing with green salad and leaf-shaped pieces of pink aspic.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox tongue
Forms the main body of the dish, becoming tender through boiling or braising.
Butter
Carries the green or ham flavour and gives the glaze and garnish a rich, smooth texture.
Curried eggs
Provide the main filling for the hollow, adding richness and a mild curry flavour.
Chopped aspic
Sets into a cool, firm gelatin border that holds the dish together and adds moisture.

The step that matters

Skewering and trimming the tongue. The tongue must be held firmly in shape while it cools and sets, otherwise it can warp. Trimming excess fat keeps the glaze thin and even, so it adheres cleanly without greasy patches.

Flavor stand-ins for the parsley

How well each one fits the dish's main ingredients (butter, egg, sauce):

  1. Capersbetter flavor fit
  2. Nutmegabout as good a flavor fit
  3. Tarragonabout as good a flavor fit
  4. Parsleythe original

Fit is the average pairing score against butter, egg, sauce. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
