Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Procure a pasty pan with a well-fitting perforated plate and a valve-pipe.

  2. Place the meat in the lower part of the pan.

  3. Season the meat.

  4. Pour a small quantity of gravy over the meat.

  5. Spread mashed potatoes evenly on top.

  6. Form a crust at least 3 inches thick.

  7. Screw on the valve-pipe.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C).

  2. Do not remove the cover until ready to serve the meat.

  3. Serve in the same tin with a neatly-folded napkin around it.

What each ingredient does

Potatoes
Mashed potatoes form the thick crust that encloses the meat and gravy while it bakes.
Meat
Provides the main filling, cooking through in the enclosed pan to become tender.
Gravy
Adds moisture so the meat stays juicy during baking.
Egg
Beaten egg brushed on the crust promotes browning in the oven.

The step that matters

Do not remove the cover until ready to serve the meat.. Opening the sealed pan during baking lets steam and heat escape, which can leave the meat drier and cooler. Keeping it closed holds moisture in and lets the meat cook evenly.

Swap the potato

How well each one fits the dish's main ingredients (meat, egg):

  1. Asparagusfits better
  2. Shallotfits about as well
  3. Mustardfits about as well
  4. Potatothe original

Fit is the average pairing score against meat, egg. Candidates are from the same food group and used in at least 100 recipes.
