Short Paste with Chocolate Filling

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 300°F (150°C).

  2. Line shell molds with short paste and prick the bottoms.

  3. Bake until pale brown.

  4. Mix potato flour and grated chocolate with milk and half the cream; stir until boiling.

  5. Beat in the yolks of the eggs and the whites of two eggs, along with the spice.

  6. Whip the remaining cream and fold it into the mixture.

  7. Add half the sugar and fill the shells three-quarters full with this mixture.

  8. Make a meringue with the remaining egg whites, sugar, and lemon juice; spread on top of the filled shells.

  9. Place in a cool oven to brown and set the meringue.

  10. Serve cold, optionally dusted with vanilla or cinnamon sugar.
