Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a smooth, silky mouthfeel to the curd.
Lemons
Provide the acidity and aroma that define the curd's flavour, with rind adding fragrance.
Sugar
Sweetens the curd and balances the sharpness of the lemon juice.
Eggs
Thicken the curd as they set gently with heat, giving it body.

The step that matters

Do not let it boil. Once the mixture boils, the egg proteins can scramble and curdle, leaving a grainy texture instead of a smooth, thick curd. Keep the heat very gentle throughout.
