Omelet Souffle

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Separate the yolks and whites of the eggs.

  2. Beat the yolks with a pinch of salt until thick and pale.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Gently fold the beaten egg whites into the yolk mixture.

  5. Heat butter in a pan over medium heat.

  6. Pour the mixture into the pan and cook until the bottom is set.

  7. Transfer the pan to a preheated oven at 350°F (175°C) to finish cooking.
