Pickle Vegetables

Ingredients

Directions

  1. Boil the vinegar with ginger, white pepper, allspice, turmeric, curry powder, and shallots for 5 minutes.

  2. Mix the mustard with a little warm vinegar until smooth.

  3. Stir the mustard mixture into the vinegar; do not boil after adding mustard.

  4. Let the vinegar cool, then pour it over the dried vegetables in a large dish.

  5. Ensure the vegetables are fully covered with vinegar and store in jars, intermixing the spices.

  6. Cover jars with bladder to exclude air and check periodically, adding more boiled vinegar as needed.
