Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast meat
Forms the savoury filling that gives the puffs their main flavour.
Cold mashed potatoes
Form the paste that wraps the filling and becomes tender and crisp when fried.
Egg
Binds the mashed potato into a paste that holds its shape.
Cold gravy
Moistens the meat so the filling stays juicy rather than dry.

The step that matters

Sealing the edges. If the edges are not sealed firmly, the filling can leak out during frying and the puffs can open or absorb fat. A tight seal keeps the meat inside while the potato casing crisps and browns.

Swap the potato

How well each one fits the dish's main ingredients (meat, pepper, egg, flour):

  1. Shallotfits better
  2. Spinachfits better
  3. Capsicumfits better
  4. Potatothe original

Fit is the average pairing score against meat, pepper, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
