What each ingredient does

Marrow
Forms the main body of the chutney and gives it a rich, soft texture.
Loaf sugar
Adds sweetness and balances the sharpness of the vinegar.
Vinegar
Provides acidity that gives the chutney its tang and sharpness.
Shallots
Soften during boiling and add a mild, savoury sweetness.
Ginger
Adds warm, aromatic flavour that carries through the cooked mixture.
Chillies
Supply heat, which builds as the chutney cooks and rests.

The step that matters

Boil the mixture until tender. Boiling softens the marrow and shallots and lets the sugar and vinegar blend and thicken the mixture. Stopping early leaves it watery and raw-tasting, while overcooking can make it stick and dry out.

Swap the clove

How well each one fits the dish's main ingredients (sugar, shallot, ginger, mustard, turmeric, vinegar):

  1. Cardamomfits better
  2. Capersfits better
  3. Allspicefits better
  4. Clovethe original

Fit is the average pairing score against sugar, shallot, ginger, mustard, turmeric, vinegar. Candidates are from the same food group and used in at least 100 recipes.
