Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavour and most of the body; stewing softens its fibres into a purée.
Sugar
Adds sweetness that balances the rhubarb's sharp acidity.
Lemon jelly
Its gelatin dissolves into the warm fruit and sets the mixture as it cools.

The step that matters

Stir the jelly until completely dissolved. Gelatin only sets evenly when it is fully dissolved. Undissolved pieces leave lumps and weak spots, so the jelly may not hold its shape when turned out.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
