Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Provides the main savoury flavour and the bulk of the cake.
Mashed potatoes
Binds the mixture and keeps the cakes moist and tender inside.
Dripping or butter
Adds richness and fat that helps the cakes brown in the pan.
Dried herbs
Adds aroma and savoury flavour to the meat and potato mixture.

The step that matters

Heating the dripping until it smokes. The fat must be hot enough to brown the outside quickly. If it is too cool, the cakes absorb grease and steam instead of forming a crisp, browned crust.

Swap the potato

How well each one fits the dish's main ingredients (meat, butter, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits less well
  4. Mustardfits less well

Fit is the average pairing score against meat, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
