What each ingredient does

Potatoes
Form the bulk of the loaf, providing starch that sets into a soft, tender body when mashed.
Dripping
Adds fat for richness and flavour, and helps the surface brown during cooking.
Milk
Adds moisture so the mashed potato becomes smooth and easy to shape.

The step that matters

Browning the loaf. Browning relies on the Maillard reaction, which needs a dry, hot surface. Turning the loaf so all sides brown gives an even crust and flavour.

Swap the potato

How well each one fits the dish's main ingredients (milk, pepper):

  1. Capsicumfits better
  2. Potatothe original
  3. Tomatofits less well
  4. Carrotfits less well

Fit is the average pairing score against milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
