Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Minced Meat and Mashed Potatoes

Ingredients

Directions

Prepare the potatoes

  1. Scrub and wash the potatoes, peel them thinly, remove any eyes, and wash them in fresh water.

  2. In a saucepan, bring boiling water and 1 teaspoon of salt to a boil; add the potatoes and boil gently until tender.

  3. Strain off the water, steam the potatoes dry, and mash them finely with a fork.

  4. Mix in half the pepper and the butter or milk; shape the potatoes like a wall on a dish and keep them hot.

Make the meat filling

  1. Chop the cold meat finely on a board.

  2. In a small saucepan, heat the dripping and flour, stirring over the fire; add the gravy and stir until it boils.

  3. Add the remaining salt, pepper, sauce, and meat; simmer for 30 minutes, stirring occasionally.

Serve

  1. Pour the meat and gravy into the center of the potatoes and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dish and, once mashed, the soft base that holds the meat.
Butter or milk
Adds fat and moisture so the mashed potatoes stay soft and smooth.
Cold meat
Provides the main filling, which becomes tender again when simmered in gravy.
Dripping
Adds rich fat and flavor as the base for the gravy.
Flour
Thickens the fat and gravy into a smooth sauce.
Gravy
Adds moisture and savory flavor that coats the meat.

The step that matters

Steam the potatoes dry before mashing. Excess water dilutes the potato and makes the mash loose and watery. Steaming off surface moisture lets the starch hold a firm, fluffy texture.

Swap the potato

How well each one fits the dish's main ingredients (meat, butter, flour, pepper, sauce):

  1. Shallotfits better
  2. Capsicumfits better
  3. Mustardfits about as well
  4. Potatothe original

Fit is the average pairing score against meat, butter, flour, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
