Potatoes Baked

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare and bake

  1. Wash and scrub the potatoes thoroughly.

  2. Bake the potatoes in a 350°F (175°C) oven for about 2 hours, turning them often.

Finish and serve

  1. Once done, remove them from the oven and cut a small slit in each potato.

  2. Scoop out a little of the inside to make room for a small piece of butter.

  3. Insert the butter, squeeze the edges together, and return the potatoes to the oven for 1 minute, slit side up.

What each ingredient does

Potatoes
Starch provides the fluffy, floury interior that forms as the potato cooks through.
Butter
Melts into the hot flesh, adding moisture, richness and flavor.

The step that matters

Bake until fully tender. Potato starch only swells and softens fully when the interior reaches cooking temperature for long enough. Underbaked potatoes stay dense and grainy, so test for softness before slitting.
