Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk of the jelly and natural pectin that helps it set.
Isinglass
Gelatine-like protein that sets the liquid into a firm, wobbly jelly when cooled.
Loaf sugar
Adds sweetness and helps give the jelly its glossy, set texture.
Lemons
Add acidity and aroma, and help balance the sweetness of the apples and sugar.

The step that matters

Boil the mixture for 30 minutes. Boiling concentrates the sugar and apple pectin so the jelly can set; the isinglass is added beforehand and gels as it cools, so the mixture must be fully dissolved and evenly mixed before pouring.

Swap the lemon

How well each one fits the dish's main ingredients (apple, sugar):

  1. Pearfits better
  2. Vanillafits better
  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
