Paste, Puff

Ingredients

Directions

  1. Place 1 lb of flour on a board or marble slab and make a hole in the center.

  2. Add a pinch of salt, break in the eggs, and add 1 teaspoon of lemon juice.

  3. Mix with enough water to form a soft paste.

  4. Knead the butter to remove excess water.

  5. Roll out the paste to about ½ inch thick, lay the butter on it, and fold the paste over.

  6. Roll out carefully and set aside for 30 minutes in a cool place or on ice.

  7. Roll out and fold in three parts, then set aside for another 30 minutes.

  8. Repeat rolling out for 3 more times, or roll at least 7 times for a lighter paste.
