Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gooseberries
Provide the tart fruit pulp that gives the pudding its main flavor and body.
Eggs
Set when baked, giving the pudding its structure and a custard-like texture.
Bread crumbs or naples biscuits
Absorb moisture from the pulp and help thicken the filling as it bakes.
Sugar
Sweetens the tart gooseberry pulp and balances its acidity.

The step that matters

Straining the eggs into cold pulp. Adding beaten eggs to hot pulp can scramble them, leaving lumps. Cooling the pulp first lets the eggs blend smoothly so the filling sets evenly when baked.
