Apple Pie

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Pare, core, and slice the apples.

  3. Line the edge and sides of a pie dish with puff pastry.

  4. Fill the dish with the sliced apples and sprinkle with enough sugar to sweeten.

  5. Cover the pie with more pastry and make a small hole in the center.

  6. Insert a rolled-up slip of writing paper into the hole to keep it open.

  7. Stew the apple parings and cores in a little water, then strain the liquid.

  8. After baking, pour the strained liquid into the pie through a funnel.

  9. If the apples are bland, add grated lemon peel, lemon juice, quince marmalade, or nutmeg.
