Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the cream into a sliceable solid as it cools.
Cream
Provides fat and richness, giving the set dessert a smooth, creamy texture.
Milk
Adds liquid and dairy body, softening the richness of the cream.
Lemons
Rind flavours the cream with aroma; juice adds acidity that brightens the sweetness.

The step that matters

Stirring in the lemon juice when nearly cold. Adding acidic juice to warm cream can curdle the dairy and thin the set. Waiting until the mixture is nearly cold lets it thicken smoothly before the isinglass sets it.
