Lemon Jelly

Ingredients

Directions

Prepare the infusion

  1. Grate the yellow rinds of the lemons into the water and let it stand for 1 hour.

  2. Add the loaf sugar and the juice of the lemons once the sugar is dissolved.

  3. Strain the mixture through a fine sieve.

Make the jelly

  1. Heat the strained mixture with the isinglass or ivory jelly and the beaten egg whites.

  2. Tie turmeric in muslin, soak it in a spoonful of water, and squeeze a little into the jelly for color.

  3. Boil gently, skim off any foam, and strain through a jelly bag.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemon zest and juice
Provides the sharp acidity and lemon aroma that define the jelly's flavor.
Loaf sugar
Adds sweetness and helps give the jelly its body once dissolved.
Isinglass or ivory jelly
Gelatin-like setting agent that causes the liquid to firm into a jelly as it cools.
Egg whites
When heated and strained, they bind impurities that rise as foam so they can be skimmed away, clarifying the jelly.

The step that matters

Boil gently, skim off any foam, and strain through a jelly bag. Boiling hard can cloud the jelly and break up the setting structure, while skimming and straining remove coagulated egg white and debris, so the jelly stays clear and firm.

Swap the turmeric

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Dillfits better
  4. Turmericthe original

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
