Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Isinglass
- Gelatin-like setting agent that firms the liquid into a jelly as it cools.
- Orange juice
- Provides the main citrus flavor and liquid base of the jelly.
- Lemon juice
- Adds acidity that brightens the sweetness and sharpens the flavor.
- Loaf sugar
- Sweetens the jelly and, rubbed on the rind, draws out fragrant citrus oils.
- Sherbet
- Adds sweetness, extra flavor and liquid to the mixture.
The step that matters
Pour the mixture into molds and let it set. Isinglass only sets reliably once the liquid has cooled enough; pouring while still hot or leaving it too long before unmolding affects the firmness and clarity of the jelly.
Swap the saffron
The recipe marks saffron as optional. How well each one fits the dish's main ingredients (orange, lemon, sugar):
- Cinnamonfits better
- Gingerfits about as well
- Saffronthe original
- Peppermintfits about as well
Fit is the average pairing score against orange, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
