Why it works: Pepper and ginger match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 6,800 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Walnuts
Ingredients
Directions
Soak the walnuts in strong salt and water for 12 days, changing the brine every 2 days.
Boil the walnuts until they can be peeled.
Return the peeled walnuts to the same water, cover tightly, and simmer over low heat until they are green.
Drain the walnuts and boil enough vinegar to cover them with whole black pepper, Jamaica pepper, mace, ginger, and a few bay leaves.
Pour the hot vinegar over the walnuts and cover them tightly.
Once cooled, seal the jar with leather and add more vinegar as needed to keep the walnuts covered.
