What each ingredient does

Flour
Starch that swells as it heats in the gravy, thickening it and giving it body.

The step that matters

Stir quickly and gradually add the gravy to the thickener. Starch clumps when it hits liquid in one spot. Mixing it with a ladleful of gravy first and adding the rest gradually lets the granules disperse evenly, so the gravy thickens smoothly without lumps.
