What each ingredient does

Bread crusts
Starch that thickens the strained broth, giving the soup body.
Crawfish shells and claws
Release their flavour and colour into the broth during the hour of boiling.
Onions
Build savoury sweetness and aromatic depth as the base of the broth.
Carrots
Add natural sweetness and body to the broth.

The step that matters

Skim the surface when the water begins to boil. Foam and impurities rise as the water heats. Removing them early keeps the broth clear and prevents off flavours from settling into the soup.

Swap the onion

How well each one fits the dish's main ingredients (carrot, parsley, bread, lobster):

  1. Turnipfits better
