Rice Puddings Baked, or Boiled

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the rice

  1. Wash and clean the rice in cold water.

  2. Combine the rice with cold water in a quart saucepan.

  3. Bring to a boil for 5 minutes.

  4. Drain the water.

Make the pudding base

  1. Add 1 quart of milk, lemon peel, and cinnamon.

  2. Simmer gently for at least 1 hour and 15 minutes.

  3. Stir every 5 minutes until the rice is tender.

  4. Remove from heat.

  5. Stir in the butter, beaten eggs, nutmeg, and sugar until smooth.

Bake and boil

  1. Line a pie dish with puff paste.

  2. Pour in the mixture.

  3. Bake at 350°F (175°C) for 45 minutes.

  4. Add 1 more egg and ½ pint more milk.

  5. Boil for 1 hour.

  6. Butter small teacups.

  7. Bake or boil for 30 minutes.

Variations and serving

  1. Add candied lemon or orange peel, dried cherries, currants, raisins, or finely minced apples for variation.

  2. Serve baked or boiled puddings with white wine sauce or butter and sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Its starch thickens the milk and gives the pudding its body as it cooks.
Milk
Forms the liquid base that gives the pudding its moisture and creamy texture.
Eggs
Set as they cook, binding the pudding into a firm, sliceable custard.
Butter
Adds fat for richness and a smoother, softer mouthfeel.
Sugar
Provides sweetness and helps the top brown lightly in the oven.

The step that matters

Simmer and stir the rice until tender. Milk sugars and proteins scorch easily on the base of a pan. Regular stirring keeps the rice from sticking while its starch thickens the milk evenly before the eggs are added.

Swap the lemon
