What each ingredient does

Pigeons
Provide the main meat, which becomes tender and flavourful through slow stewing.
Butter
Carries the seasoning into the birds and adds richness to the finished dish.
Gravy
Forms the body of the stew liquid, adding savoury depth and moisture.
White wine
Adds acidity that brightens the rich gravy and helps balance its flavour.
Oysters
Add a briny, savoury note and a soft texture to the finished stew.
Pickled mushrooms
Add acidity and a tangy, earthy flavour to the sauce.

The step that matters

Skim the fat and thicken the liquid. Fat left on the surface makes the sauce greasy and thin. Skimming first and then thickening gives a smoother, cleaner-tasting sauce that coats the meat.

Swap the mace

How well each one fits the dish's main ingredients (pepper, clove, butter, white wine, lemon, onion, mushroom):

  1. Thymefits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against pepper, clove, butter, white wine, lemon, onion, mushroom. Candidates are from the same food group and used in at least 100 recipes.
