Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix potato flour, grated cheese, butter, milk or cream, salt, and pepper until smooth.

  3. Add the beaten yolks of the eggs and mix well.

Fold and bake

  1. In a separate bowl, whisk the egg whites until frothy.

  2. Gently fold the egg whites into the batter.

  3. Pour the mixture into a deep soup plate or dish, filling it halfway.

  4. Bake in the preheated oven until risen and golden.

Serve

  1. Serve immediately to prevent it from falling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift, and yolks add richness and set the structure as they cook.
Potato flour
Thickens the cheese base so it holds the risen egg foam without collapsing.
Grated cheese
Adds savory flavor and fat, and helps the base firm as it bakes.
Butter
Adds fat for richness and a smooth, tender texture in the base.
Milk or cream
Adds moisture so the base blends smoothly and stays tender.

The step that matters

Folding in the egg whites. Whites must be whisked to foam and folded in gently, since deflating the air bubbles removes the lift that makes the soufflé rise.

Swap the potato

How well each one fits the dish's main ingredients (flour, cheese, butter, milk, pepper, egg):
