What each ingredient does

Whitings
Give the stock its body and fish flavour as they break down during boiling.
Eel
Adds richness and body to the fish stock while it cooks.
Crawfish or prawns
Their shells are boiled to make a shellfish-flavoured broth, and their tails go into the soup.
Lobster
Adds sweet shellfish flavour and firm pieces of meat to the finished soup.
Beef gravy
Adds savoury depth and body to the soup.
Butter
Adds richness and a smooth, rounded mouthfeel to the finished soup.

The step that matters

Straining the shell broth over the shells. Pouring the liquid through a sieve over the pounded shells separates the clear broth from fine debris, so the soup stays clear rather than gritty or cloudy.

Swap the mace

How well each one fits the dish's main ingredients (whiting, fish, pepper, ginger, parsley, onion, thyme):

  1. Marjoramfits better
  2. Fennelfits better

Fit is the average pairing score against whiting, fish, pepper, ginger, parsley, onion, thyme. Candidates are from the same food group and used in at least 100 recipes.
