Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, giving the set dessert a smooth, creamy texture.
Milk
Adds moisture and dilutes the cream, making the mixture lighter and softer.
Isinglass shavings
Gelatin-like setting agent that firms the cream as it cools in the mold.
Raspberry juice or syrup
Supplies raspberry flavor, color and sweetness to the cream.
Sugar
Sweetens the cream and fruit, balancing the tartness of the raspberries.

The step that matters

Whisk until three parts cold. The mixture must be cool enough to thicken without the setting agent clumping or setting before it is whisked into a light, even cream. Whisking while it cools also incorporates air for a lighter texture.
