What each ingredient does

Eggs
Set into the structure of the omelet as they cook and firm up with heat.
Milk
Adds moisture and makes the omelet mixture tender rather than rubbery.
Flour
Thickens the batter slightly so it holds together when folded.
Butter
Fat for frying that adds flavor and browns the outside of the omelet.

The step that matters

Cook the bottom until golden, then flip gently. Eggs cook quickly over direct heat, so high heat can scorch the base before the top sets. Moderate heat and a gentle flip keep the omelet tender and evenly golden.

Swap the shallot

The recipe marks shallot as optional. How well each one fits the dish's main ingredients (egg, milk, flour, parsley, onion, pepper, nutmeg):

  1. Chivefits about as well
  2. Shallotthe original
  3. Carrotfits about as well
  4. Spinachfits about as well

Fit is the average pairing score against egg, milk, flour, parsley, onion, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
