Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the cream into a firm, sliceable mold as it cools, much like gelatin.
Cream
Provides richness and a smooth, creamy mouthfeel.
Milk
Adds dairy body and a lighter texture than cream alone.
Raspberry juice or syrup
Gives the set cream its fruity flavour, colour and sweetness.
Sugar
Sweetens the cream and balances the tartness of the raspberry.
Brandy
Adds aromatic warmth and depth of flavour to the dessert.

The step that matters

Whisk in the brandy until three parts cold. Adding brandy while the mixture is still warm can disrupt how evenly the isinglass sets. Whisking until the mixture is partly cold keeps it smooth and lets it set uniformly in the mold.

Swap the raspberry

How well each one fits the dish's main ingredients (cream, milk, sugar, brandy):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Apricotfits about as well
  4. Raspberrythe original

Fit is the average pairing score against cream, milk, sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
