What each ingredient does

Eggs
Bind the batter and give the puffs their light, airy structure when fried.
Flour
Provides the starch that sets around the eggs to give the puffs body.
Loaf sugar
Adds sweetness and helps the puffs brown in the hot lard.

The step that matters

Frying the batter in hot lard. The lard must be fully hot before the batter goes in. If it is too cool, the puffs absorb fat and turn greasy instead of crisping and browning quickly. Turning them as needed helps them cook evenly to golden brown.
