Ingredients

Directions

Prepare the cream

  1. Boil the cream with the thin rind of a lemon.

  2. Stir the mixture until it is nearly cold.

Combine and chill

  1. In a serving dish, combine the strained lemon juice with enough sugar to sweeten the cream.

  2. Pour the cream into the dish from a height, moving it around to mix with the juice.

  3. Prepare at least 6 hours before serving, preferably a day in advance.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a smooth, thick body to the finished dessert.
Lemon juice
Adds tartness that balances the sweetness and richness of the cream.
Sugar
Sweetens the cream and offsets the sharpness of the lemon juice.
Lemon rind
Infused into the hot cream to add a fragrant lemon aroma.

The step that matters

Pouring the cream from a height. Lemon juice is acidic and can thicken or curdle cream when they meet. Pouring from a height and moving the dish mixes them gently and evenly, so the texture stays smooth rather than clumped.

Swap the lemon
