To Roast Hare

Ingredients

Directions

  1. Skin and wash the hare thoroughly.

  2. Soak the hare in water for 1-2 hours.

  3. If old, lard the hare or soak it in vinegar, then wash it well.

  4. Stuff the hare with a mixture of liver, anchovy, bacon, suet, herbs, pepper, salt, nutmeg, onion, and breadcrumbs, then sew it up.

  5. Baste the hare with milk until half-cooked, then switch to butter.

  6. If blood settles in the neck, soak it in warm water and nick the skin to release it.

  7. Keep the hare at a distance from the fire initially.

  8. Serve with froth, rich gravy, melted butter, and currant jelly.
