Lemon Rice

Ingredients

Directions

Cook the rice

  1. Boil the rice in milk with sugar until soft.

  2. Transfer the rice to a bowl and let it cool.

Make the lemon syrup

  1. Peel the lemon thickly and cut the peel into ½‑inch shreds.

  2. Boil the shreds in two cups of water, changing the water each time, to remove bitterness.

  3. Squeeze and strain the lemon juice into the water with the shreds, adding sugar to taste.

  4. Stew the mixture slowly for two hours until it becomes syrupy.

Serve

  1. Once cold, turn the jellied rice onto a dish and pour the syrup and shreds over it.

  2. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Starch that softens in milk and sets into a jelly-like base once cooled.
Milk
Cooks with the rice to make it soft and creamy, adding richness and body.
Lemon
Provides the acidic, aromatic flavour of the syrup and shreds.

The step that matters

Stew the lemon mixture slowly. Slow stewing lets the water evaporate gently so the mixture thickens into a syrup without scorching or turning bitter. Changing the peel water beforehand removes bitterness from the shreds.

Swap the lemon
