Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Layer the sliced potatoes in a pie dish, adding chopped onion, pepper, and salt between each layer.

  3. Add a little water and dot the top with pieces of butter.

  4. Cover the pie with puff pastry and seal it well.

Bake and serve

  1. Bake for about 1.5 hours.

  2. If desired, add hard-boiled egg yolks and pour in mushroom ketchup through a funnel after baking.

What each ingredient does

Potatoes
Form the bulk of the filling, becoming tender and soft as they cook through.
Butter
Adds richness and moisture, and helps the top brown as it melts over the potatoes.
Puff pastry
Forms a sealed, flaky crust that traps steam and browns in the oven.
Onion
Adds savory flavor that mellows and sweetens as it bakes among the potatoes.

The step that matters

Seal the puff pastry well. A tight seal keeps steam inside the pie, which cooks the potatoes through. A gap lets steam escape, leaving the filling dry or underdone.

Swap the onion
