Mackerel Baked

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove the heads and clean the mackerel, taking out the roes.

  2. Rub the inside of the fish with black pepper and coarse sea salt.

  3. Place the roes back inside the fish.

  4. Season the fish with a mixture of allspice, black pepper, and salt.

Bake

  1. Lay the mackerel close together in a baking pan.

  2. Cover with equal parts vinegar and water.

  3. Tie down the fish with strong white paper.

  4. Bake in a slow oven at 300°F (150°C) for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mackerel
Forms the main body of the dish, cooking gently in the slow oven to stay moist.
Vinegar
Adds acidity that sharpens the flavour and helps soften the fish during slow baking.
Allspice
Adds warm aromatic flavour that seasons the fish from the inside.

The step that matters

Tie down the fish with strong white paper. Covering the fish with paper holds in steam and liquid during the long, slow bake, so the flesh cooks gently and stays moist rather than drying out at the surface.

Swap the allspice

How well each one fits the dish's main ingredients (pepper, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits about as well
  4. Allspicethe original

Fit is the average pairing score against pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
