Fried Eggs and Minced Ham or Bacon
Ingredients
Directions
Cut the bacon into very thin slices, then into small square pieces.
Place the bacon in a stew-pan over low heat to render some fat.
Once the fat has melted, transfer the bacon to a warm dish.
In the same stew-pan, add a ladleful of melted lard or bacon fat.
Add about a dozen small pieces of bacon to the pan.
Carefully crack an egg into the pan, ensuring it cooks evenly.
Remove the egg when the yolk is still soft and place it on a warm dish.
Repeat the process for the remaining eggs.
