Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Pound the blanched almonds in a mortar until fine.

Make the batter

  1. Mix the almond paste with the 3 egg whites, loaf sugar, grated lemon peel, and 15 egg yolks until well combined.

  2. Gently fold in the beaten egg whites and sifted flour.

  3. Prepare a mold and pour in the mixture.

Bake and cool

  1. Bake in a slow oven at 300°F (150°C) for 1 hour.

  2. Carefully remove from the mold and place on a sieve to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Blanched almonds
Ground almonds provide the bulk and nutty flavour of the cake in place of much flour.
Egg yolks
Yolks add richness, fat and colour, and help bind the batter.
Egg whites
Whipped whites trap air, giving the sponge its light, risen structure as it bakes.
Loaf sugar
Sugar sweetens the cake and helps keep the crumb tender and moist.
Sifted dry flour
A small amount of flour adds structure so the sponge holds its shape after baking.

The step that matters

Folding in the beaten egg whites. Folding gently keeps the air in the whipped whites. Stirring hard deflates the foam, so the sponge bakes up dense instead of light.
