Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almonds

  1. Blanch the sweet and bitter almonds, then dry them for 30 minutes.

  2. Pound the almonds very fine in a mortar with the rose or orange-flower water.

Make the filling

  1. In a warm place, cream the butter until smooth.

  2. Add the almond mixture, sifted sugar, grated lemon peel, cream, and eggs to the butter.

  3. Mix everything well with a pestle.

Bake and serve

  1. Cover a patty pan with puff pastry and fill it with the almond mixture.

  2. Decorate with slices of candied lemon peel and split almonds.

  3. Bake in a brisk oven at 400°F (200°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the filling and help it set into a firm, sliceable custard-like texture when baked.
Sweet almonds
Provide the bulk of the filling, giving body, nutty flavour and a tender crumb.
Butter
Adds richness and moisture, and carries the fine texture of the creamed filling.
Sifted loaf sugar
Sweetens the filling and helps it brown lightly in the oven.
Puff pastry
Forms the crisp, flaky case that holds the almond filling while it bakes.

The step that matters

Pound the almonds very fine. Fine, smooth almond paste blends evenly into the butter and sugar. Coarse pieces leave a gritty texture and can release oil unevenly during baking.

Swap the lemon
