Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg proteins thicken the custard and help the pudding set as it bakes.
Milk
Forms the liquid custard that the bread soaks up and that bakes into the pudding.
Bread
Absorbs the custard and bakes into a soft, layered, custardy texture.
Sugar
Adds sweetness to the custard and the layered filling.

The step that matters

Heating the egg into the milk until thickened. Egg proteins thicken the milk as they gently warm, but too much heat makes them curdle or scramble, leaving a grainy custard. Heat gently and stop once it coats a spoon.

Swap the currant

How well each one fits the dish's main ingredients (egg, milk, sugar, bread):

  1. Vanillafits better

Fit is the average pairing score against egg, milk, sugar, bread. Candidates are from the same food group and used in at least 100 recipes.
