Pickles, &C

Ingredients

Directions

  1. Soak walnuts in strong saltwater for 12 days, changing the brine every 2 days.

  2. Boil the walnuts until they can be peeled.

  3. Return the peeled walnuts to the same water, cover, and simmer over low heat until they turn green.

  4. Drain the walnuts and boil enough vinegar to cover them.

  5. Add whole black pepper, Jamaica pepper, mace, ginger, and bay leaves to the vinegar.

  6. Pour the hot vinegar over the walnuts and cover them tightly.

  7. Once cooled, seal with leather or bladder.

  8. Add more vinegar as needed to keep the walnuts covered.
