Ingredients

Directions

Prepare the bran

  1. Grease a pan with butter to prevent sticking.

  2. Boil the bran in plenty of water until soft.

  3. Transfer the cooked bran to a clean earthen pot and let it cool until it forms a jelly.

Make the pudding

  1. Combine the bran jelly with milk in a pan until it reaches a rice-milk consistency.

  2. Stir constantly with a wooden spoon to prevent burning.

  3. When near boiling, stir in flour mixed with a little milk, if using.

  4. Add pimento, sugar, and oil to taste.

  5. Once it boils, it is ready to serve.

  6. For a richer dish, thicken with beaten egg yolks instead of flour, and add cinnamon or nutmeg if desired.

  7. Optionally, mix in washed currants or raisins for added flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bran
Forms the jelly-like body of the pudding when boiled and cooled.
Flour
Thickens the milk mixture so it sets to a smoother, firmer consistency.
Egg yolks
Thicken and enrich the pudding, giving it a richer, creamier texture.
Milk
Provides liquid and creaminess, bringing the bran to a rice-milk consistency.
Sugar
Adds sweetness to balance the mild, starchy bran.

The step that matters

Stirring the bran and milk mixture. Starchy mixtures scorch on the bottom of the pan if left unattended, and the milk can catch and taste burnt. Constant stirring spreads the heat evenly and keeps the texture smooth as it thickens.
