Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks bind the batter and add richness and structure to the thin pancakes.
Cream
Adds moisture and fat, giving the pancakes a tender, rich texture.
Sugar
Adds sweetness and helps the pancake surface brown as it cooks.

The step that matters

Flipping the pancake. A thin pancake is fragile and sets only partly at first. Wait until the underside is golden so it holds together, then turn it carefully to avoid tearing.

Swap the mace

How well each one fits the dish's main ingredients (egg, cream, sugar, cinnamon, nutmeg, ginger, brandy):

  1. Clovefits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against egg, cream, sugar, cinnamon, nutmeg, ginger, brandy. Candidates are from the same food group and used in at least 100 recipes.
