Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Cooked whole inside the pastry, providing the filling that sets firm when fried.
Puff pastry
Forms a flaky, crisp outer shell that puffs and browns during frying.
Breadcrumbs
Add an extra crunchy, golden coating on the outside of the pastry.
Lard or butter
Conducts heat for frying and adds richness and browning to the pastry.

The step that matters

Removing the shells without breaking the whites. Boiled eggs with cracked whites lose their shape and leak during wrapping and frying. Cooling them in cold water first helps the shell separate cleanly from the set white.

Swap the white pepper

How well each one fits the dish's main ingredients (egg, butter):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against egg, butter. Candidates are from the same food group and used in at least 100 recipes.
